I love banana bread, I love bundt cake and of course chocolate. This chocolate chip banana bundt cake is moist and delicious. In Sweden we don’t bake banana bread but banana cake. What is the difference you might ask? Well it’s a little different, same ingredients but more cake-like. Tastes like banana bread but with a little twist, the chocolate glaze on top just hits the spot. You can easily serve this with a scoop of vanilla ice cream and call it dessert.
- 3 large eggs
- 1 ½ dl sugar
- 100 g butter, melted
- 3 dl flour
- 3 teaspoon baking powder
- 2 teaspoon vanilla sugar
- 2-3 large bananas, mushed
- 75 g good quality dark chocolate, chopped
- 100 g good quality dark chocolate, chopped
- 1 tablespoon salted butter
- 2 tablespoon milk

Pre heat the oven to 170C.
Beat the eggs and sugar in a large mixing bowl until light and fluffy. Mix the dry ingredients in a separate bowl and add to the eggs with the butter, bananas and chocolate. Fold in to the egg mixture.

Pore the batter in a buttered and flour a 12-cup bundt pan and bake for 35-40 minutes. Check the cake, it is done when a toothpick comes out clean near the center. Allow to cool for 10 minutes, then invert the cake onto a serving platter.

To make the glaze, add the chocolate chips (reserve 2 tablespoons for decoration) butter, milk to a bowl and microwave on high heat for about 30 seconds. Stir until combined, if the chocolate is not quite melted microwave for an additional 15 seconds. Pour the glaze over the cooled cake and sprinkle the remaining chopped chocolate over the top of the cake.
