Ingredients

Cucumbers, carrots, shallot, peanuts, cilantro, peanut butter, lime, honey, soy sauce, ginger, sesame seeds, salt, and pepper.

Step 1

In a small bowl, stir together the ingredients for the dressing.

Step 2

Shred or ribbon the carrot and then the cucumber.

Step 3

Add the shredded cucumber and carrot with the chopped peanuts to a salad bowl.

Step 4

Pour over the dressing and gently toss the salad together.

Step 5

Top the salad with some chopped peanuts, sesame seeds and fresh cilantro. Enjoy!
