Almond milk, vanilla extract, lemon, coconut oil, sugar, coconut sugar, all-purpose flour, cornstarch,  baking powder, baking soda,  salt and blackberries

Step 1

Start by making the  streusel topping.

Step 2

In a mixing bowl, stir together the milk, lemon juice, zest and vanilla.

Step 3

Stir in the sugar and  coconut sugar.

Step 4

Add in the sifted flour, cornstarch, baking powder, baking soda and salt.

Step 5

Toss the blackberries in the flour and then gently fold them into the batter.

Step 6

Scoop the batter into the prepared muffin tin and top with the streusel.  Bake until golden brown.
