sunflower oil, onion, green pepper, garlic, ginger, red curry paste, peanut butter, coconut milk, pasata or chopped tomatoes, vegetable broth, chickpeas, lentils of your choice, lime and cilantro
Sauté the onion and green pepper until it is soft and the onion translucent.
Add the garlic, ginger and curry paste. Stir well while sautéing for a few minutes until fragrant.
Stir in the tomatoes, vegetable broth and coconut milk.
Add the chickpeas and lentils, stir and bring to a simmer.
Serve hot topped it with a squeeze of lime, some chopped cilantro and peanuts.
