Ingredients

Vegan butter,  brown sugar, granulated sugar, pistachios,, vanilla extract, flour, cornstarch, cocoa powder, baking soda, salt and chocolate chips

Step 1

To a large bowl or stand mixer, add the butter, brown and granulated sugar. Beat the butter and sugar until light and creamy.

Step 2

Add the milk, vanilla and coffee,  mix until combined.

Step 3

To the bowl, add the flour, cocoa powder, cornstarch, baking soda and salt.Mmix until just combined.

Step 4

Fold in the chocolate chips and chopped pistachios.

Step 5

Scoop the cookie dough onto the prepared cookie sheet.

Step 6

Bake the cookies,  they will be still be soft but  will firm up as they cool.
