Ingredients

Butterl, onion, mushrooms, potatoes, garlic, spices, heavy cream and vegetal broth.

Step 1

Sauté the onion until translucent and the mushrooms have softened and released liquids and are starting to brown.

Step 2

Add the minced garlic, thyme, rosemary, salt and black pepper. Stir well and sauté for another minute or until fragrant.

Step 3

Stir in the vegetal broth and simmer until the vegetables  are fork tender.

Step 4

Stir in the heavy cream and take out ⅓ of the soup. Blend until smooth and return to the pot  and stir well.

Step 5

Serve hot with a drizzle of  cream, some chopped thyme and optional mushrooms.
