Ingredients
Cucumber, pickled beets, red onion, feta cheese, walnuts and dill. Dressing: Olive oil, balsamic vinegar, honey, dijon, salt, pepper.
Step 1
In a small bowl, stir together the ingredients for the dressing.
Step 2
Cut the cucumber and pickled beets in half lengthwise and then into slices. Thinly slice the red onion and chop the dill.
Step 3
Add the sliced cucumber, beets and red onion to a salad bowl.
Step 4
Top with the nuts, goats or feta cheese and dill.
Step 5
Pour over the dressing and gently toss the salad together.
