Couscous, chickpeas, red bell pepper, red onion, cucumber, cashews and cilantro Dressing: Olive oil, lime, garlic, honey, curry powder, paprika, salt, pepper and red chili flakes

Step 1

Cook the couscous and fluff it with a fork. Let it cool down.

Step 2

In a small bowl, stir together the ingredients for the dressing.

Step 3

To a salad bowl, add the couscous, chickpeas, chopped vegetables, cilantro, raisins and cashews.

Step 4

Drizzle over the dressing.

Step 5

Toss to combine and add mote salt and pepper to taste.
