Ingredients

Olive oil, onion, celery, carrots, sweet potatoes, garlic, spices  and vegetal broth.

Step 1

Add the oil, chopped onion and celery to a large pot. Sauté on medium heat until the onion is  soft and translucent.

Step 2

Add the garlic and dried spices, stir well and sauté over for a few minutes until fragrant.

Step 3

Stir in the vegetal broth and simmer until the vegetables  are fork tender.

Step 4

Blend until smooth using an immersion blender.

Step 5

Serve hot with a drizzle of cream and top with some fresh thyme and crunchy seeds if desired.
