Ingredients

black beans, romain lettuce, cucumber, cherry tomatoes, red or yellow pepper, avocado, olives, red onion, feta cheese and parsley Dressing: Olive oil, lemon, garlic, honey, dijon mustard, salt, pepper.

Step 1

In a small bowl, mix together the ingredients for the dressing.

Step 2

Add the Roman lettuce and all the vegetables, olives and chopped parsley to a large salad bowl.

Step 3

Pour over the dressing and gently toss the salad together.

Step 4

Top with some feta cheese and chopped parsley and enjoy!
