Lentils, red onion, tomato, carrot, green pepper, parsley, almonds, dried apricots, oil, lemon, garlic and a mix of spices.

Step 1

In a salad bowl, mix together the ingredients for the dressing.

Step 2

Add all the lentils, chopped vegetables, parsley and apricots to the bowl with the dressing.

Step 3

Gently toss all the ingredients together and then let the salad  sit to marinade.

Step 4

Top the salad with the almonds before serving.
