Olive oil, onion, carrots, celery, red bell pepper, sweet potato, garlic, tomato sauce, vegetal broth, lentils and spices
Step 1
To a large Duch oven or soup pot, add the the olive oil and all the vegetables. Sauté on medium high heat while stirring often until the onions are soft and translucent.
Step 2
Add the garlic and spices, sauté for another minute until fragrant.
Step 3
Add the stock, tomatoes and lentils. Bring to a simmer while stirring.
Step 5
Serve warm topped with with cilantro, chili flakes and crusty bread for dipping.
