These chewy Oat Flour Chocolate Chip Cookies are loaded with chocolate, naturally gluten-free and vegan. They are easy to make and ready in under 30 minutes.

Vegan butter,  brown sugar, granulated sugar, flaxseed meal, vanilla extract, oat flour, cornstarch, baking soda, salt and vegan chocolate chips

Step 1

In a small bowl mix the flaxseed meal with the hot water to make flax egg. To a large bowl or stand mixer, add the butter, brown and granulated sugar.

Step 2

Beat the butter and sugar until light and creamy. Pour in the flax egg and vanilla and mix until combined.

Step 3

To the bowl, add the oat flour, cornstarch, baking soda and salt, and mix until just combined.

Step 4

Fold in the chocolate chips.

Step 5

Scoop the cookie dough onto the prepared cookie sheet.

Step 6

Bake the cookies,  they will be still be soft but  will firm up as they cool.
