Pumpkin pie baked oats  A healthy breakfast or snack that tases like pumpkin spice cake. This easy recipe comes together in the blender and can be baked in the oven or  in just minutes in the microwave.

Rolled oats, pumpkin puree, almond milk, peanut butter, maple syrup, vanilla extract, baking powder, pumpkin spice, salt, chocolate chips and pecans

Step 1

Put all the ingredients (except the chocolate and nuts) in a hight speed blender.

Step 2

Blend until smooth, scraping down the sides as needed.

Step 3

Fold in the chocolate chips  and nuts, saving  some for topping.

Step 4

Fill the ramekins and top  with a few extra  chocolate chips and nuts.
