Ingredients
Quinoa, lentils, yellow bell pepper, red onion, cucumber, cherry tomatoes, arugula, feta cheese, parsley and pumpkin seeds Dressing: Olive oil, lemon, garlic, honey, dijon mustard, salt, pepper and red chili flakes
Step 1
Cook the quinoa and let it cool down.
Step 2
In a small bowl, stir together the ingredients for the dressing.
Step 3
To a salad bowl, add the quinoa, lentils, arugula, chopped bell pepper, cucumber, red onion, cherry tomatoes, crumbled feta cheese and parsley.
Step 4
Add the dressing to the salad.
Step 5
Toss to combine and top with some feta cheese and pumpkin seeds.
