Ingredients

Pumpkin, Olive oil, Sea salt, Dried thyme, Ground pepper, Chili flakes, Quinoa, Arugula, Feta cheese, Pumpkin seeds, Red onion and dressing

Step 1

Toss the pumpkin with the  olive oil and spices. Place on a baking sheet and roast in the oven.

Step 2

in a small bowl, mix all the ingredients for the dressing and set aside.

Step 3

Cook quinoa in vegetable broth

Step 4

To a large salad bowl, add the arugula, quinoa and roasted pumpkin. Top with feta cheese, red onion, pumpkin seeds and drizzle with the lemon dressing.
