Quinoa, Bell pepper, Black beans, Corn, Cherry tomatoes,  Avocado,, Red onion, Jalapeño, Cilantro and Dressing

Step 1

Cook the quinoa and let it cool down to room temperature.

Step 2

In a small bowl, stir together the ingredients for the dressing.

Step 3

Add the cooked and cooled quinoa and vegetables to a salad bowl.

Step 4

Pour over the dressing and lightly toss together.
