Ingredients

Olive oil, Carrots, Yellow onion, Garlic, Ginger, Dried spices, Red lentils, Vegetal broth, Coconut milk and Lime juice

Step 1

Add the oil, carrots and onions to a soup pot and sauté . Then add the garlic, ginger and spices.

Step 2

Pour in the vegetal broth and coconut milk.

Step 3

Stir in the lentils and  bring the soup to a simmer.

Step 4

Simmer until the vegetables are fork tender and the lentils fully cooked.

Step 5

Blend until smooth with an immersion bender.
