Ingredients

Sweet potato, Red bell pepper, Olive oil, Sea salt, Dried thyme, Ground pepper, Chili flakes, Quinoa, Spinach, Feta cheese, Walnuts, Red onion and dressing

Step 1

Toss the sweet potato and bell pepper with the olive oil, corn starch and spices.  Roast in the oven.

Step 2

in a small bowl, mix all the ingredients for the dressing and set aside.

Step 3

Cook quinoa and let cool.

Step 4

To a large salad bowl, add the baby spinach, quinoa, roasted sweet potato and bell pepper. Top with the crumbled feta cheese, red onion and walnuts.
