Ingredients

Olive oil, onion, celery, carrots, apples, garlic, ginger, spices, coconut milk and vegetal broth

Step 1

Add the oil, chopped onion and vegetables to a large pot. Sauté on medium heat until the onion is  soft and translucent.

Step 2

Add the ginger, garlic and dried spices, stir well and sauté over for a few minutes until fragrant.

Step 3

Stir in the vegetal broth and coconut milk. Simmer until the vegetables are fork tender.

Step 4

Blend until smooth using an immersion blender.

Step 5

Serve hot with a squeeze of lime, a drizzle of coconut cream and  some chopped parsley and chili flakes.
