Ingredients

Vegan butter,  brown sugar, granulated sugar, vanilla extract, peppermint extract, flour, cornstarch, cocoa powder, baking soda, salt and vegan white  chocolate and crushed peppermint candies.

Step 1

To a large bowl or stand mixer, add the butter, brown and granulated sugar. Beat the butter and sugar until light and creamy.

Step 2

Add the milk, vanilla and peppermint extract, mix until combined.

Step 3

To the bowl, add the flour, cocoa powder, cornstarch, baking soda and salt. Mix until just combined.

Step 4

Fold in the chocolate and crushed peppermint candies.

Step 5

Scoop the cookie dough onto a cookie sheet and top with extra chocolate and peppermint pieces if desired.

Step 6

Bake the cookies,  they will be still be soft but  will firm up as they cool.

Step 7

Drizzle with optional melted white chocolate and more  chopped candy cane.
