Olive oil, onion, garlic, spices, rice, vegetable broth, salsa, black beans, coriander and lime.
Step 1
To a saucepan, add oil and onion. Cook until soft then add the garlic and spices.
Step 2
Add the rice and stir while it cooks for a few minutes.
Step 3
Pour in the broth and the salsa, bring to a simmer.
Step 4
Take it off the heat and gently fold in the black beans.
Step 5
Serve hot with a sprinkle of chopped cilantro and a squeeze of lime.
