Ingredients

Olive oil, onion, carrots, celery, garlic, zucchini, kidney beans, chickpeas, diced tomatoes, pasta elbow, vegetable broth, dried herbs and spices,  peas and fresh spinach

Step 1

In a large dutch oven or pot, add the oil and sauté the onion, carrot, zucchini and celery.

Step 2

Add the garlic and let cook  with the veggies.

Step 3

Add the remaining ingredients and simmer u til all the vegetables are tender and the pasta is cooked.

Step 4

Stir in the spinach and peas.

Step 5

Serve with some fresh basil and a vegan parmesan.
