Ingredients

Vegan butter, brown sugar, Granulated sugar, Almond milk, All purpose flour, Rolled oats, Flaxseed meal, Baking Soda, Cinnamon,  Sea salt

Step 1

In a small bowl, mix the flaxseed meal with the almond milk, stir well and leave to thicken.

Step 2

To a large bowl or stand mixer, add the butter, brown and granulated sugar. Beat the butter and sugar until light and creamy.

Step 3

Add the almond milk mixture, vanilla extract and mix until combined. Add the flour, rolled oats, baking soda and salt, and mix until just combined.

Step 4

1. Cover and chill the dough in the fridge for at least 1 hour.

Step 5

Scoop the chilled cookie dough onto the prepared cookie sheet.

Step 6

Bake the cookies until slightly crispy at the edges and soft in the center. They will set as they cool down.
