Ingredients

Almond milk, lemon, sugar, olive oil, vanilla extract, all purpose flour, almond flour, baking powder,  baking soda and salt

Step 1

Mix the almond milk, lemon juice and lemon zest together  in a mixing bowl.

Step 2

Add the oil, sugar and vanilla,  stir well.

Step 3

Sift in the flour, almond flour, baking powder and baking soda.

Step 4

Pour the batter into the prepared pan, smoothen out the top and bake.

Step 5

Dust the olive oil cake with some powdered sugar and top with fresh berries if desired.
