Ingredients

Almond milk, vanilla extract, lemon, oil, sugar, brown sugar, all-purpose flour, cornstarch,  baking powder, baking soda,  salt and strawberries

Step 1

Stir together the liquid ingredients in a mixing bowl.

Step 2

Sift in the flour, cornstarch, baking powder, baking soda and salt.

Step 3

Stir until the batter just comes together.

Step 4

Toss the strawberries with a little flour and add them to the bowl. Gently fold them into the batter.

Step 5

Scoop the batter into the prepared muffin tin and bake until golden brown.

Step 6

Stir together the strawberry icing until it is smooth.
