Olive oil, red onion, bell pepper, garlic, black beans, corn, quinoa, jalapeño, spices, tomato sauce and vegetal broth,
Step 1
To a large soup pot, add the oil, onions and bell pepper. Sauté over medium heat for a few minutes until the onion is translucent.
Step 2
Add the garlic, chopped jalapeño and the spices, stir well and sauté for another minute
Step 3
Pour in the vegetal broth and tomatoes and stir well.
Step 4
Add the black beans, corn and quinoa, stirring well while bringing the soup to a simmer. Cook until the quinoa is fully cooked, stirring often.
Step 5
Serve hot with toppings of choice.
