Vegan Apple Cinnamon Pancakes

If you like apple pie and pancakes, then you will loooove these pancakes. Soft and fluffy pancakes with warming cinnamon spice. Topped off with apples simmered in maple syrup and cinnamon.

Servings: 4 people
Ingredients
Pancakes
  • 2 Cups almond milk
  • 2 tablespoon apple cider vinegar
  • 2 Cups all purpose flour
  • 1 tablespoon brown sugar or coconut sugar
  • 2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 gala apple, peeled and grated
  • 1 tablespoon coconut oil and more for frying
Apple topping
  • 2 apples peeled and chopped
  • 3-4 tablespoon maple syrup
  • 1 teaspoon cinnamon
Instructions
Pancakes
  1. Start by mixing the almond milk with the apple cider vinegar and let it sit for 5 minutes until it starts to curdle like butter milk.

  2. In a separate bowl mix all the dry ingredients and then add the almond milk, coconut oil and grated apple.

  3. Fry the pancakes in a little coconut oil until golden brown on the bottom and bubbling on the top. Flip and cook until golden brown on the bottom. Keep warm until served. 

Apple topping
  1. Add all the ingredients in a sauce pan with a splash of water and let it simmer until the apples are soft. If you like more sauce, add a little extra maple syrup.

    Serve the pancakes with the apple topping and Enjoy!!
