Vegan Cherry and Chocolate Chip Pancakes

These fluffy Vegan Chocolate Chip Pancakes are studded with sweet cherries, a perfect summer breakfast. Chocolate and cherries go so well together, one of my favorite flavour combos. 

Ingredients
  • 1 Cup almond milk
  • 1,5 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup or honey
  • ½ tsp vanilla paste
  • 1 ¼ Cup (190g) all purpose flour
  • 1 tablespoon baking powder
  • pinch of salt
  • 1 Cup pitted and chopped cherries
  • ⅓ Cup (50 g) chocolate chips
  • coconut oil for cooking
  • opional, cherries and meled chocolate for serving
Instructions
Pancakes
  1. Start by mixing the almond milk with the vinegar. Let the mixture sit for 5 minutes.

  2. Mix the dry ingredients in a bowl, add the almond milk mixture with the maple syrup and vanilla paste or extract. Mix until just combined, be carfull not to over mix or the pancakes will become dence. Let the batter rest for 5 minutes then gently fold in the cherries and chocoale chips.

  3. Heat a non-stick pan over medium heat, melt a little coconut oil and ladle a small amount of batter into the pan. Cook until the pancakes has bubbles on the top begin to set, flip and cook the other side.
  4. Serve the pancakes with fresh cherries and melted chocolate if deciered.
