These Vegan oatmeal chocolate chip cookies are healthy, gluten-free and super easy to make in one bowl. Also refined sugar free.

Ingredients
  • ¼ cups (125ml) almond milk
  • 2 tablespoon chia seeds
  • 2 very ripe bananas, mashed
  • ¾ cups oats
  • ¼ cups almond flour
  • ¼ cups chopped almonds
  • ¼ cups chocolate chips
  • 2 tablespoon almond or peanut butter
  • 1 ½ teaspoon cinnamon
  • pinch of salt
Instructions
  1. Pre heat the oven to 175C (350F)

  2. Mix the chia seeds and almond milk and let sit for 10 minutes to thicken up.

    Then add the rest of the ingredients and stir well. Let the batter sit for 10 minutes.

  3. Take 1 ½ tablespoon of the batter and roll into a ball. Place of a parchment paper lined baking sheet. Push the ball down to a cookie shape.

  4. Bake in the oven for 15-18 minutes, they should still be soft in the middle.

    Let them cool down and then store in an air tight container for up to 5 days
