Vegan Peanut Butter and Chocolate Cookies

Super easy Vegan Peanut Butter and Chocolate Cookies, made with only 5 wholesome ingredients.

Servings: 14 cookies
Ingredients
  • 1 flax egg 1 tablespoon flaxseed meal mixed with 3 tablespoon hot water
  • 100 g dates
  • ½cup (160 g) natural peanut butter
  • 4 tbsp unsweetened cocoa powder
  • pinch of sea salt
  • ¼ cup chocolate chips, melted (optional, for topping)
Instructions
  1. Preheat the oven to 180C and line a baking tray with parchment paper.

  2. Start by making the flax egg, mix the flaxseed meal with the hot water and let it sit for 10 minutes. At the same time soak the dates in hot water and let them sit 10 minutes, then drain.

  3. Add the dates to a food processor and mix util smooth and creamy. Add the rest of the ingredients and pulse to combine.

  4. Roll into balls and press down using a fork to make them flatter. Then will not spread in the oven.

  5. Bake for 7-9 min, the cookies will still be soft when you take them out of the oven but will set as they cool. So it is important to let the cool down completely before removing them to an air tight container.
