Ingredients
  • 1 cup rolled oats
  • 2 tablespoon chia seeds, divided
  • 1 ½ cups almond milk
  • ½ cup yoghurt of your choice
  • 2 maple syrup, divided
  • 1 teaspoon vanilla extract
  • 1 cup frozen fruit
Instructions
  1. Start by placing the frozen fruit or berries in a microwave safe bowl. Heat on high in the microwave until it is piping hot and bubbling. Stir in 1 tablespoon of chia seeds and 1 tablespoon of maple syrup. Stir well and set aside to cool to room temperature.

  2. In a bowl, mix together the oats, chia seeds and a pinch of salt.

  3. Add the almond milk, yoghurt, maple syrup and vanilla extract. Stir well, let it sit for 10 min and mix well again. This is to prevent lumps forming from the chia seeds.

  4. In 2 glasses or glass containers, add the frozen fruit mixture to the bottom. Top with the overnight oats mixture and cover with plastic wrap or lid. Place in the fridge overnight or for at least 4 hours.

  5. To serve, top with extra yoghurt and frozen fruit or berries.
