his Lemon Cheesecake Overnight Oats recipe is super creamy and full of fresh lemon flavour. A healthy breakfast that only takes a few minutes of prep time.

Ingredients
  • 1 cup rolled oats
  • 1 cups almond milk
  • 1 cup yoghurt of your choice
  • 1 tablespoon chia seeds
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • zest of 1 small lemon
  • pinch of salt
Instructions
  1. In a bowl, mix together the oats and chia seeds.

  2. Add the almond milk, maple syrup, vanilla, lemon zest and a pinch of salt.

  3. Mix well, let it sit for 5 min and mix well again. This is to prevent lumps forming from the chia seeds.

  4. Cover and place in the fridge overnight or for at least 4 hours.
  5. To serve, fill two glasses with the overnight oats and top yoghurt and granola.
