Ingredients

Olive oil, onion, carrots, celery,  red bell pepper, quinoa, garlic, tomato paste, vegetal broth, tomato sauce, red lentils  and spices.

Step 1

Sauté the onion, carrots, celery and red pepper until the onions are soft and translucent.

Step 2

Add the garlic, tomato purée and spices. Stir well and sauté for another minute until fragrant.

Step 3

Add the stock, tomatoes, lentils and quinoa. Bring to a simmer  while stirring.

Step 5

Cook stirring often,  until the vegetables are fork tender and the lentils and quinoa is fully cooked.
