Birthday cake overnight oats are a healthy and festive breakfast full of rainbow sprinkles and healthy ingredients. With a layer of sweet strawberry jam and creamy, vanilla overnight oats, this is a great and festive breakfast.

Ingredients
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • pinch of salt
  • 1 ½ cups almond milk
  • ½ cup vanilla yoghurt of your choice
  • 1-2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
Topping
  • 4 tablespoon strawberry chia jam or store bought jam
  • 2 tablespoon rainbow sprinkles, and more for topping
  • ½ cup vanilla yoghurt
Instructions
  1. In a bowl, mix together the oats, chia seeds and a pinch of salt.

  2. Add the almond milk, yoghurt, maple syrup and vanilla extract. Stir well, let it sit for 5 min and mix well again. This is to prevent lumps forming from the chia seeds. Do not add the rainbow sprinkles yet, the color will bleed and discolour the oats. Cover and place in the fridge overnight or for at least 4 hours.

  3. To serve, take the chilled oats and gently mix in the rainbow sprinkles. Don't sir too much or they will break up.

  4. Fill two glasses and layer with the strawberry jam. Top with vanilla yoghurt and sprinkles and enjoy!
