This overnight oat recipe is a fun and festive dessert inspired breakfast that comes together really fast the night before. Kids love it! But it doesn’t have to be someones birthday, skip the candle (or don’t) and enjoy it on a weekday for a fun breakfast.

Ingredients
This Birthday cake overnight oat recipe is really easy to make and only requires a few ingredients, see the list below.

- Rolled oats, or old fashion oats, they hold their shape and create a great texture in your overnight oats. I don’t recommend using quick cooking oats since they will become soggy.
- Chia seeds, mixing in a little chia seeds gives this overnight oat a thick and creamy texture with the benefit of some added nutrients as well.
- Salt, just a little to enhance the flavor of these overnight oats.
- Almond milk, or other plant-based milk to keep this recipe vegan, or milk of your choice. For non vegan, cows milk can be used.
- Maple syrup or other liquid sweetener like agave.
- Vanilla extract, for a hint of vanilla that complements the apple and cinnamon flavor.
- Strawberry jam, try this Strawberry Chia Jam or use a store bought kind.
- Rainbow sprinkles, or any other kind of sprinkles of your choice.
- Topping, vanilla yoghurt and rainbow sprinkles.

Instructions
These birthday cake overnight oats comes together really fast and easy and are perfect for meal-prep. Follow along with the with the step-by-step photos below, for the full written instructions see the recipe card at the bottom.
In a bowl, mix together the oats, chia seeds and a pinch of salt.
Add the almond milk, yoghurt, maple syrup and vanilla extract.
Stir well, let it sit for 5 min and mix well again. This is to prevent lumps forming from the chia seeds.
Do not add the rainbow sprinkles yet, the color will bleed and discolour the oats. Cover and place in the fridge overnight or for at least 4 hours.
To serve, take the chilled oats and gently mix in the rainbow sprinkles. Don’t sir too much or they will break up.
Fill two glasses and layer with the strawberry jam. Top with vanilla yoghurt and sprinkles and enjoy!
Hint: I prefer to mix in the rainbow sprinkles just before serving, that way they will stay crunchy and the colors won’t bleed and discolour the oats.
Substitutions and Variations
- Gluten-free – Oats are naturally gluten-free, but can contain traces of gluten. To ensure these overnight oats gluten-free, only use certified gluten-free oats.
- Extra protein– Mix in 1 tablespoon of vanilla protein powder and an extra 2 tablespoons of milk for a protein packed breakfast.
- Toppings – These birthday cake overnight oats are topped with some vanilla yoghurt and sprinkles. Some fresh strawberries are also a great topping. For a little more sweetness, serve with a drizzle of maple syrup.
- Vegan – To keep this overnight oat recipe vegan, make sure to use a plant-based milk, yoghurt and sprinkles topping.

Storage
This birthday cake overnight oats recipe will keep for up to 5 days when stored in an airtight container in the fridge. That’s why they are perfect for meal-prep!
I prefer to mix in the rainbow sprinkles just before serving, that way they will stay crunchy and the colors won’t bleed and discolour the oats.
Keep in mind that the longer overnight oats are stored in the fridge, the more liquid the oats will have time to soak up. This means the consistency will become thicker. If needed, stir in a little extra milk just before serving.
Overnight oats does not freeze well so I don’t recommend this.
