Peanut Butter and Jelly Chocolate Bites

Ingredients
  • 1 cup oats, use certified gluten free if desired
  • ¾ cups peanut butter
  • 6 dates
  • 2 tablespoon maple syrup
  • 10 freeze dried strawberries and more for topping
  • 100 g dark chocolate, use vegan
Instructions
  1. Place all the ingredients except for the chocolate in a food processor. Mix, scrape down the sides as needed, until you have a dough like consistency. 

  2. Melt the chocolate in the microwave for 30 seconds intervals until melted. Stir after every 30 seconds. 

  3. Roll the dough into balls and dip in the melted chocolate and place on parchment paper to set. Top with chopped freeze dried strawberries and store in the fridge.
