Breakfast granola tarts

If you like yoghurt and granola for breakfast then you will love these healthy and gluten free fruit tarts. They are easy to make, vegan and are not only pretty but tasted amazing.

Ingredients
  • 100 g (1Cup) oats
  • 40 g (⅓ Cup) mixed nuts or almonds
  • 1 tablespoon coconut oil
  • 2 tablespoon maple syrup
  • pinch of salt
  • ½ teaspoon cardamon or cinnamon
  • yoghurt, fruit and berries of your choice for topping
Instructions
  1. Preheat the oven to 160C (325F)

    Process the oats, nuts, salt and cardamon in a food processor until it has a course flour like consistency. 

  2. Add the coconut oil and maple syrup and pulse until just combined and has a crumb like consistency.

  3. Divide the mixture into 4 small, lightly greased tart molds with removable bottoms. I find it easiest to use the back of an oiled spoon to help press the granola evenly across the pan and up the sides.

    Bake for 15-17 minutes until just golden brown.

  4. Let cool completely in the molds and gently remove the granola tarts.

    Top with your choice of yoghurt, fruit and berries.
