Decedent, dark chocolate Vegan Pomegranate Brownies specked with chocolate chips and pomegranate jewels. These brownies loaded with chocolate flavor and the perfect, gooey texture. They are really easy to make in one bowl and perfect for all you chocolate lovers!

Ingredients
  • 2 tablespoon flaxseed meal
  • 1 cup almond milk
  • ½ cup coconut oil, melted
  • 1 cup coconut sugar
  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • ⅓ cups almond meal
  • 1 tsp baking powder
  • pinch of salt
  • ½ cup pomegranate seeds
  • ¼ cup dairy free chocolate chips
Instructions
  1. Preheat the oven to 175C (350F)

    Grease or line a 9 inch square baking pan with parchment paper.

  2. Start by stirring together the flaxseed meal with the almond milk in a large mixing bowl. Let sit for 10 minutes to thicken. 

  3. To the bowl, add the melted coconut oil and coconut sugar and mix well.

  4. Sift in the flour, cocoa powder, almond flour, baking powder and pinch of salt. Stir until just combined, do not over mix.

  5. Pour the batter in the prepared baking pan, top with pomegranate seeds and chocolate chips. Bake for 20-25 minutes, it should still be a little jiggly in the middle. Let the brownies cool completely in the pan before cutting and serving.
