This delicious and creamy Coconut milk overnight oats recipe only takes a few minutes to prep and only requires 6 ingredients. A healthy breakfast, ready to go on those busy mornings and perfect for meal prep!

Ingredients
  • 1 cup oats
  • 2 cups light coconut milk
  • 1 tablespoon chia seeds
  • 1-2 tablespoon maple syrup
  • 1 teaspoon vanilla bean powder or vanilla extract
  • pinch of salt
  • coconut flakes for topping
Instructions
  1. In a bowl, mix together the oats, coconut milk, chia seeds, maple syrup to taste. Cover and place in the fridge overnight or for at least 4 hours.
  2. To serve, fill two glasses and top with coconut chips and chia seeds if desired.
