Let the mixture rest for 10 minutes to thicken. If your mixture is too wet to form into balls, all a little more oats and let them rest for another 10 minutes.
Scoop out about 1 tablespoon and roll into balls. Coat them in coconut and place or a baking sheet or plate and place the fridge for at least 1 hour to set. Once set, place the bliss balls in the an airtight container and store in the fridge for up to 3-4 days.
