Banana and peanut butter overnight oats is a wholesome and delicious breakfast. The combination of the sweet banana and peanut butter is a classic flavor that the whole family will love. It’s an easy, make-ahead breakfast that works great for a healthy meal prep!

Ingredients
  • 1 banana, very ripe
  • 1 ½ cups almond milk, or milk of choice
  • ¼ cup peanut butter, all natural (smooth or crunchy)
  • 1-2 tablespoon maple syrup, to taste
  • 1 teaspoon vanilla extract
  • 1 cup (100g) rolled oats
  • 1-2 tablespoon chia seeds (2 tablespoon for a thicker and creamier texture)
  • ½ teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons chocolate chips (optional)
Topping
  • banana slices
  • peanut butter
  • chopped nuts or chocolate chips
Instructions
  1. In a mixing bowl, add the banana and mash well until creamy. Add the peanut butter, maple syrup and vanilla extract and stir well. Slowly stir in the milk and stir until everything is combined.
  2. Add the oats, chia seeds, cinnamon and a pinch of salt. Stir well a few times to prevent lumps forming from the chia seeds.
  3. Taste the oat mixture and add more maple syrup is desired. Cover and place in the fridge overnight, or for at least 4 hours.

  4. To serve, fill two glasses and top with a few slices of banana, peanut butter and chopped nuts or chocolate chips if desired.
