This Edamame Chickpea Salad is a healthy, protein-packed side that is quick and easy to make. With tender edamame and hearty chickpeas, tossed in a flavorful dressing, fresh herbs and crunchy sesame seeds, this plant-based salad comes together in about 15 min!

Ingredients
  • 1 can (400g / 14 oz) chickpeas, drained and rinsed
  • 2 cups frozen shelled edamame, defrosted
  • ¼ cup fresh cilantro or parsley, chopped
  • 2-3 scallions green onion, sliced
  • 1 tablespoon sesame seeds
Dressing
  • ¼ cup avocado oil or extra virgin olive oil
  • 1 lime, juiced
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh ginger, peeled and grated
  • 1 large clove of garlic, minced
  • ½ teaspoon red pepper flakes, less or more to taste
  • salt and ground black pepper to taste
Instructions
  1. In a salad bowl, stir together the ingredients for the dressing.
  2. Add the chickpeas, edamame, fresh cilantro or parsley and sliced green onion to the bowl with the dressing and gently toss.

  3. Let sit to marinate for at least 30 min before serving. Top with some sesame seeds and fresh cilantro for serving.
