These Strawberry Vegan Oatmeal Bars only contains wholesome and plant-based ingredients, they are vegan and gluten free.

Ingredients
  • 1 ripe banana, mashed
  • 1 Cup natural nut butter (almond or peanut)
  • 3 tablespoon maple syrup or honey
  • 2 Cups rolled oats
  • 1 Cup chopped mixed nuts of your choice
  • 2 teaspoon cinnamon
  • pinch of salt
Strawberry chia jam
  • 2 Cups strawberries, hulled and chopped (fresh or frozen)
  • 2 tablespoon chia seeds
  • 3-4 tablespoon maple syrup or honey
Instructions
Chia Jam
  1. Start by making the chia jam.

    Add the strawberries (fresh or frozen) and the maple syrup to a pan with a splash of water. Bring to a boil while stirring and simmer for 5-10 minutes, stir occasionally. Once the strawberries are nice and soft and juicy, take the pan off the heat.

    Taste it and adjust with more maple syrup if desired, the amount needed depends on how sweet your strawberries are.

    Stir in the chia seeds and leave to cool.

Crumble
  1. Preheat the oven to 160C (325F)

    Line a baking pan 20x20 cm (8x8 inches) with parchment paper.

  2. In a mixing bowl, mash the banana until smooth and creamy. Add the nut butter and maple syrup and stir until well combined. combined all the ingredients.

  3. Add the rolled oats, chopped nuts, cinnamon and a pinch of salt. Stir together with a spoon or use your fingers. Reserve 1 cup of the crumble for the topping.

  4. Add the remaining crumble to the prepared baking pan. Press the mixture to an even layer with the back of a spoon or measuring cup.

  5. Spread out the cooled chia jam and spread to an even layer. Using your fingers, loosely sprinkle over the reserved crumble topping. Bake the oatmeal bars for 25-30 minutes or until just golden brown.

    Let it cool in the pan and then cut into pieces.
