Heirloom tomato Bruschetta is one of my favourite appetiser, loaded with fresh flavors and super easy to make! Sweet, heirloom tomatoes meets pungent garlic and bright basil over crusty bread. What’s not to love? When tomatoes are in season this bruschetta is a given at our house.

Ingredients
  • 3 heirloom tomatoes, diced
  • 1-2 garlic cloves, minced
  • ½ cup fresh basil leaves, chopped
  • 2 tablespoon good quality extra virgine olive oil and extra for the bread
  • 1 teaspoon sea salt and ground black pepper, to taste
  • 1 baguette, sliced
Instructions
  1. Heat the oven with the grill function.  

    Dice the heirloom tomatoes removing the white hard stem. Mix all the ingredients for the bruschetta in a bowl and taste with salt and pepper. Let it sit while you prepare the bread.

  2. Slice the baguette and brush with a little olive oil. Toast in the oven for about 2 minutes or until golden brown, flip the bread slices and toast the other side as well. Do not walk away from the oven, the bread can burn super fast! Keep an eye on it the whole time.

    Top the bread with a big scoop of the bruschetta mixture. 

    Serve immediately and enjoy!
