This Lemon Basil Pasta Salad is fresh and super easy to make. The perfect summer side dish loaded with flavor from the zesty lemon dressing fresh basil.

Ingredients
  • 1 lb (450g) dried pasta of choice
  • ½ cup fresh basil, chopped
  • 2 ounces (50g) arugula, about 2 cups
  • ½-1 cup parmesan cheese, grated or shaved
Dressing
  • ¼ cup olive oil preferable extra virgin
  • 1 large lemon, zest and juice
  • 1 small shallot, minced
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dijon mustard
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried basil
  • ¼ teaspoon red chili flakes (optional)
Instructions
  1. In a small bowl, stir together all the ingredients for the lemon dressing.

  2. Cook pasta according to package instructions for al dente. Drain and rinse the pasta in cold water and add to a large salad bowl.

  3. To the salad bowl with the cooked pasta, add the arugula, basil and parmesan cheese. Pour over the dressing.

  4. Toss the salad together and add more salt and pepper to taste. Top with some extra parmesan cheese and chopped basil if desired.
