Potato Salad with Herbs and Parmesan

This Potato Salad with Herbs and Parmesan is a delicious and easy side dish. It’s the perfect way to use all those herbs growing in your garden. It is fresh, healthy and oh so tasty!

Ingredients
  • 1,5  kg (1 pound)  small red potatoes, new potatoes or waxy (firm) potatoes, cut in half
  • 5 radishes, thinly sliced
Dressing
  • 1 lemon, juiced
  • 1 teaspoon dijon mustard
  • 1 tablespoon honey or maple syrup
  • 3 tablespoon good quality olive oil
  • 1 clove of garlic, minced
  • 1 shallot, finely chopped
  • 1 cup chopped mixed herbs, I used dill, parsley, oregano and basil
  • ¾ cup parmesan cheese, freshly grated
  • 1 teaspoon flaky sea salt
  • ½ teaspoon ground black pepper
Instructions
Potatoes
  1. Add the potatoes to a large pot of salted water.

    Bring water to a boil, then lower the heat and simmer for about 10 to 15 mins, depending on the size of the potatoes. The potatoes should be just fork tender.

  2. Drain the potatoes and let them steam dry, uncovered, for about 5-10 minutes.

Dressing
  1. While the potatoes are cooking stir together all the ingredients for the dressing in a large serving bowl. 

  2. Add the warm potatoes to the serving bowl with the dressing. Gently toss to coat the potatoes with the dressing. Taste and add more salt and black pepper to taste.

  3. Top with the radishes slices and optional a little chopped fresh herbs and parmesan shavings. Serve this herbed potato salad at and serve at room temperature.
