Pumpkin Chia Pudding is the perfect creamy and healthy fall breakfast. This recipe is super easy to make in just minutes, with only a few simple ingredients. It is packed with warming fall spices and real pumpkin purée for the ultimate breakfast.

Ingredients
  • 1 cup almond milk unsweetened
  • ½ cup pumpkin puree
  • 1-2 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • 4 tablespoon chia seeds
  • 1 teaspoon pumpkin spice or cinnamon
  • Topping Yoghurt and cinnamon
Instructions
  1. Add the milk, pumpkin puree, maple syrup and vanilla extract to a mixing bowl. Stir well until smooth.

  2. Add the chia seeds and pumpkin spice and stir very well. Let the mixture sit for 1 min, then stir well again. This is to prevent lumps forming from the chia seeds.

  3. Pour into 2 serving glasses, cover and place in the fridge for at least 4 hours or preferably over night. Top with some yoghurt and a dusting of cinnamon if desired.
