Tiramisu Chia Pudding

Creamy and delicious Tiramisu Chia Pudding. Layers of chocolate, coffee and vanilla chia pudding topped with a dusting of cacao powder. A healthy take on the dessert classic!

Servings: 2 servings
Ingredients
  • 1 cup almond milk
  • 4 tablespoon chia seeds
  • ½ cup greek style yoghurt, coconut yogurt or other yoghurt of choice
  • 2 tablespoon maple syrup, or more to taste
  • 1 teaspoon vanilla extract, or vanilla been paste
  • 1 tablespoon cocoa powder, unsweetened
  • 1 tablespoon strong espresso coffee
Topping
  • ¼ cup greek style yoghurt, coconut yogurt or other yoghurt of choice
  • cocoa powder
Instructions
  1. In a small mixing bowl, stir together the chia seeds, almond milk, yoghurt, maple syrup and vanilla. Let sit 5 min then stir very well again. Divide the pudding evenly in 3 bowls. 

  2. The first bowl, leave the vanilla chia pudding as is.

  3. To the second bowl, add the cocoa powder and stir well until incorporated. 

  4. To the third bowl, stir in the coffee and optional 1 teaspoon of cocoa powder for color. Stir well until incorporated. Cover all the bowls and place in the fridge for at least 4 hours or preferably over night until it thickened.

  5. For serving, layer the pudding in two glasses. First the chocolate, then coffee then vanilla and top it all with extra yoghurt, a dusting of cocoa powder and some shaved dark chocolate if desired.

Recipe Notes

Instead of making 3 different layers, all the ingredients can be mixed together directly in one bowl. It wont look the same, but taste just as good!
