Coconut French Toast will bring a tropical vibe to your breakfast table. It is the perfect combination of a creamy interior with a crispy exterior.
Heat a nonstick pan on medium high heat.
Mix the eggs and coconut milk in a shallow bowl. Add the shredded coconut to another bowl.
Dip the bread on both sides in the egg mixture and then in the coconut flakes.
Add a little butter to the pan and fry the bread until golden brown on both sides.
Serve with maple syrup, berries and mango.
