Coconut French Toast

Coconut French Toast will bring a tropical vibe to your breakfast table. It is the perfect combination of a creamy interior with a crispy exterior.

Ingredients
  • 4-6 slices day old bread
  • 4 eggs
  • ½ cup coconut milk from a can
  • ½ cup coconut flakes
  • butter for frying
  • maple syrup, berries and mango for serving
Instructions
  1. Heat a nonstick pan on medium high heat.

  2. Mix the eggs and coconut milk in a shallow bowl. Add the shredded coconut to another bowl.

  3. Dip the bread on both sides in the egg mixture and then in the coconut flakes.

  4. Add a little butter to the pan and fry the bread until golden brown on both sides.

    Serve with maple syrup, berries and mango.
